While watching ESPN this weekend, one of the morning talk shows commented on General Patton’s statement “Everyone loves a winner and forgets a loser.” ( something along those lines the coffee hadn’t kicked in). The commentary was about Tiger Woods and Dale Earnhardt, Jr.’s void of a major win in 36 months. I had to think, “Do we as fans write off a beloved athlete, coach, or team that has had a fall from glory?” In my mind, everyone has their loop holes or nuse, as to what they will tolerate. There is a gamut of bad behavior and lack of productivity. A few examples,  placing bets  potentially getting you banded from the hall of fame, not having a major win in a year or years,  a medal being stripped because of the juice,  making it rain in the Champaign Room one too many times, playing the lead role in a bad reality shows, or being compared to Richard Nixon. I am not sure that being a winner or loser is determined by our moral fiber or productivity in any career. Athena goddess of wisdom I am not, but I know we all have a tipping point on our moral triple beam balance and possibly a breaking point to the loses we will accept in life. We all have the right to decide what’s good for us. The beauty… you define the word winner. Being informed is important, but what we do with the information is a choice. Luckily, I have some good news and a bet you can take to your bookie that will never lose. My recipes will always be a winner. Give this gold medal twist on chicken and waffles a try. My friends and family love this spin on brunch!!

Golden Chicken Strips and Cornbread Pancakes

with Mambo Sauce

Please try this for brunch!!!

 Mambo Sauce Delicious!!

1 cup ketchup (Heinz- Pittsburgh 🙂

1 cup sugar

4 tbsp water

5 tbsp white vinegar

1 tbsp Spanish Paprika

2 tbsp Sriracha (chili sauce with garlic)

2 tbsp hot sauce (crystal hot sauce)

Add all ingredients in medium sauce pan over medium heat

bring to a simmer,  whisking occasionally. Reduce to low heat

Cornbread Pancakes- Easy!!

-1 box Jiffy Cornbread mix

– 1 cup pre-packaged pancake mix

– butter

Following the directions of both and mix together.

Heat griddle to medium heat, butter, and laddle batter onto

griddle. Allow pancakes to bubble and flip. Cook until lightly golden brown

Golden Chicken Strips

– Vegetable oil, for shallow frying

– 3 full chicken boneless chicken breasts

– 3 large eggs lightly beaten

-1/4 cup hot sauce

– 4 cups all purpose flour (split in half)

– 4 tbsp garlic salt

– 4 tbsp cracked black pepper

– 4 tbsp paprika

– 4 tbsp sea salt

Heat about 2 inches of oil in a large cast-iron or heavy-bottomed skillet over

medium heat. Whisk the hot sauce and eggs in medium bowl.

Equally divide the flour for dredging station in 2 shallow pans. In both

pans with flour add 2 tbsp garlic salt, 2 tbsp sea salt, and 2tbsp black pepper. In last dredging station only, add

paprika. Cut chicken into tenders. Coat tenders in dredging station, flour-egg mixture-flour. Allow

Chicken to rest a few minutes before frying. The coating adheres better.

Fry tenders 4 minutes per side.

Drain on paper towel. Immediately, sprinkle sea salt on the fried tenders.

That is a must! Place pancakes on each plate, add chicken tenders,and

drizzle with mambo sauce ( have tons extra on the side)
