As the NFL season is coming to a close with the Pro Bowl game (they are killing me with this “Pre” Super Bowl concept), I have another great menu for you to mull over for your fabulous Super Bowl Party or any great party for that matter. But before I unveil this incredible spread, I want to share a quick science lesson with you…. A little blast from your past; Theory of Relativity, The Adrenaline Rush, Deoxyribonucleic Acid (DNA) and Charles Darwin Survival of the Fittest. And one not so scientific…Six Degrees of Separation

Theory of Relativity… Einstein, Newton, Hubble and many other physicists have discussed the concept of our capability to alter time through space and matter along with a lot of other stuff..No need to be too technical.

Adrenaline Rush is what we attribute to Fight or Flight. Epinephrine gets released and your heart and mind are racing a mile a minute…it looks like my daughter Brooke on a caffeine and pixy stix high

Deoxyribonucleic Acid (DNA)…. your family tree, gene pool, punnett square..that  means bald or not bald….freckles or no freckles…obviously in my case I got the recessive gene on that one….I consider DNA “the cloth we are cut from”..example my happy hour friends and I are all cut from the same cloth

Charles Darwin’s Survival Of The Fittest…like Gloria Gaynor said in her 1979 song “I Will Survive”….the strong (mentally and physically) will prevail….

Here is where the suspense ends..my science lesson revolves around my new friend Billy Cundiff and the ending of the AFC title game. First, I do believe in The Theory of Relativity. I have never had the privilege of playing in an AFC Championship game (I am still channeling Jack Lambert), but I am pretty confident that all of the players get into “The Zone” a.k.a slowing down time, blocking out the noise and pressure only to focus on their job. Second, Billy and I…. along with many of you…. have been victims of adrenaline high-jacking the “relative time machine”. What may have been a well mapped out plan of execution can all change when a little epinephrine hits the blood stream. Next, Billy’s DNA is that of an exceptional athlete as well as a great person. He is kind, sincere, and funny with honest intentions and an excellent work ethic. Finally, Billy understands Charles Darwin’s Theory and he will prove what he is made of…that I know. Now for my not so scientific point, you all are now six degrees of Billy Cundiff via my blog.  Disappointed as fans may have been with the outcome of the game..Billy is still a human being and not a machine. Sports evoke high emotions in many of us, but that doesn’t warrant the horrible statements that have been made. In these situations, I like to take if from the perspective of…one person does not lose a game. Just something for you to chew on….

I feel so Muhammad Ali with this menu…yes “The Greatest” It is equal to the hype and the performance of the “Thrilla In Manila”  

Southwest/Tex-Mex/ Latin Theme….Muy Bueno!!!!

Chicken Enchiladas…awesome

4 chicken breast

adobe season salt

olive oil

10 tomatillos, husked and rinsed

2 poblano chilies, coarsely chopped

2 jalapeno chilies, chopped

1 small red onion, chopped

3 cloves garlic

3 tablespoons canola oil

Kosher salt and freshly ground black pepper

1/2 cup chopped fresh cilantro

1 tablespoon honey

3 cups store bought salsa

2 cups sour cream

2 cups shredded taco style cheese

16 (8 inch) flour tortillas

Directions…..

1. Pre-heat oven to 400 degrees

2. Toss the tomatillos, poblanos, jalapenos, onion, and garlic in the oil on a baking sheet and season with salt and pepper. Roast, turning once, until the vegetables are golden brown and soft, 20 to 30 minutes. Let cool slightly.

3 Transfer to a food processor and process with the cilantro, adding a little water if necessary to adjust the consistency, until pureed. Season with the honey and additional salt and pepper if needed.

4. For quick prep, slice chicken breast in half season with olive oil and adobe season salt. Roast in a 350 degree oven for 25-30 minutes.

5. In large bowl, mix sour cream with 1 cup of green sauce.

6. Allow chicken to rest. Chop chicken into bite size pieces and toss in sour cream/green chile sauce mixture.

7. Spread 2 cups of salsa on the bottom of 13×9 baking dish.

8. Place a dollop of chicken mixture in the center of tortilla and roll like a cigar

9. Lay all enchiladas in baking dish with seam side down.

10. Bake at 350 degrees for 30 minutes

11. Add shredded cheese to the top and place under broiler for 3-5 minutes untilcheese is bubbling

Southwest Chicken Wrap…high in protein, low in fat

1 pound roasted and diced chicken breast

1 cup black beans

1 cup frozen sweet corn

3 cups salsa

1 cup fat free sour cream

1/2 cup low fat shredded cheddar cheese

bibb or iceberg lettuce

Directions……….

1. In large skillet over medium heat, mix chicken, black beans, sweet corn, and salsa. Allow to simmer for 10-12 minutes

2. On serving plate, place lettuce boats add a tablespoon of mixture. Top with a dollop of sour cream and sprinkle with shredded cheese. Roll like a cigar and eat!!!

Chorizo and Chicken Meatballs

1 pound chorizo( remove from casing)

1 pound ground chicken

1 cup panko bread crumbs

1 egg

2 packets of sazon

1 tsp adobe season salt

1/3 cup chopped cilantro

Directions…..

1. I remove the chorizo from the casing and puree in food processor. I do so to match the texture of the ground chicken.

2. In large bowl, mix chorizo, chicken, and all other ingredients…hands only. Mix thoroughly.

3. Portion out meatballs evenly..a melon scoop is your best bet. Roll balls evenly.

4. In large skillet, heat canola oil over medium heat. Fry meatballs for 2 minutes per side.

5. Remove from skillet, allow to rest on paper towel lined surface and then place on baking sheet and bake in a 350 degree oven for 10 minutes

6. I serve the meatballs with my favorite dip in the world…It is a Tastefully Simple product called Fiesta Party Mix…a dry mix that is combine with mayo and sour cream…
