Oh my gosh, tears of joy streaked my face as I watched Gabby Douglas win her all around Gold medal!! This little dynamo, with her incredible smile, has absolutely warmed my heart along with the rest of the world. It was a different reaction than what I had when I watched Mary Lou and Carrie.  I loved watching because of their phenomenal competitive spirit and I cried out of pure excitement for them and our country.  With Gabby, I was crying from a Mother’s perspective. As the tears streamed down my face, I was thinking “I wonder how her mother feels?” Not to say I wasn’t excited for her accomplishments,  but as a mother, I was trying to imagine all of the sacrifices everyone makes to get to this level of excellence. Just amazing…. The next day I  enrolled my girls in a gymnastics program. Ok…that’s a huge lie as Brooke my seven-year old is taller than Gabby. We’re looking into a basketball programs…Congratulations Gabby for setting your place in the Olympic history…she is bright, vibrant, beautiful, and the picture of  grace!! I hope we can focus on the importance of  this young woman’s accomplishments and that alone. Her future is ablaze just like her smile….

Some more dips to get you and any guests through the remainder of the Olympic Games…..I highly doubt that little Gabby would have a diet regiment along these lines, but they are yummy……

Guacamole and corn tortillas 

Ingredients

– 3 Haas Avocado (peeled and seeded)

– juice of one lime

– 1 tsp Adobo Season Salt (Goya Brand)

-1/2 tsp cayenne pepper

-1/2 tsp cumin

-1 clove minced garlic

– 1 jalapeno (seeds removed and diced very fine)

– 1 red onion chopped

– 2 plum tomatoes (seeds removed and chopped)

– 1/4 cup chopped cilantro

– vegetable oil for frying

– 20 6′ corn tortillas cut into 4 wedges

– salt/pepper mixture

Directions

1. In food processor, blend avocado and lime juice.  I like my guacamole on the smooth side. Add water, if necessary, to get to texture you are looking for.  For chunky, use a fork or potato masher and make avocado.

2. Add season salt, cumin, cayenne pepper, minced garlic and blend.

3.  Scoop out into serving dish and fold in tomato, onion, cilantro, and jalapeno.

4. Taste and season to taste with salt….

5. In 350 degree oil, fry to a golden brown and season with salt and pepper.

Artichoke Dip with Fried Pizza Bites

Ingredients

– 1 can of  artichokes (not marinated)

– 8 oz of cream cheese (softened)

– 1/2 cup mayonnaise

– 1 cup Parmesan cheese

– 2 tsp old bay seasoning

– vegetable oil for frying

– 2 cans of store-bought pizza dough(thin crust)

– mixture of  equal parts dried basil, parsley, oregano, and garlic salt (about 2 tbsp of each)

Directions

1. Drain can of artichoke and chop the pieces.  After chopping the artichoke, mix with all of the other ingredients and place in baking dish. Bake at 350 degrees for 30 minutes.

2. While baking, roll out pizza dough on a floured surface. Using a pizza cutter, cut into bit size pieces. Fry in vegetable oil over medium heat or 350 degrees, until golden brown. Sprinkle with herb/garlic mixture.

3. Serve with dip…..

Pizza Dip with Cheesy Bread Sticks

Ingredients

– 16 oz cream cheese (softened)

– 1/2 pound Hot Italian Sausage

– 2 cups mariana sauce

– 20-30 slices of pepperoni

– 2-3 cups of shredded mozzarella cheese

– 2 rolls of store-bought thin crust pizza dough (thin crust)

– strips of mozzarella (get a block of mozzarella and slice into thin strips)

– 3 eggs whisked with a bit of water for egg wash

– mixture of  equal parts dried basil, parsley, oregano, and garlic salt (about 2 tbsp of each)

Directions

1. In skillet, brown Italian sausage and drain. Add mariana sauce.

2. Spread cream cheese in baking dish, top with marinara/sausage mixture. Sprinkle with cheese and place on pepperoni slices.

3. Bake at 350 degrees for 10-15 minutes until the mozzarella cheese is melted..

4. Roll out pizza dough on a floured surface. Using pizza cutter, cut dough into rectangular strips (4×3 inches). Cut mozzarella into thin strips. Place cheese into dough and roll. Pinch the dough at the ends. Brush with egg wash and sprinkle with seasoning. Bake at 350 degrees for 10-12 minutes or until golden…
