Thursday evening, Shannon Eastin will be the first woman to officiate for the NFL during the pre-season game between the San Diego Chargers and the Green Bay Packers. You go girl!!! What an amazing accomplishment for both parties. Eastin is in a group of replacement officials hitting the field as the NFL and the NFL Referees Association are embroiled in a battle over the collective bargaining agreements, therefore the officials are locked out.  From a union stand point, she is considered a “scab”. As protocol goes, scabs are often labeled and shunned once contracts are negotiated and the “regular” workers return to their positions. Eastin is aware of this, but she felt as this was an opportunity she had to take as a woman. Eastin has been officiating collegiate football for 16 years in the Mid-Eastern Athletic Conference and has climbed through the ranks to the position of crew chief. That in itself is rather impressive, but it is crystal clear that Eastin has a thick skin and tremendous perseverance in this career that is completely male dominated.  Shannon is aware that all eyes will be on her Thursday evening…and truthfully.. she can’t make any mistakes. The pace of the NFL is much different than that of the MEAC, but Shannon has done her research by going to pre-season practices in Arizona and Seattle. Even though a practice is significantly different than a regular game, she is taking the time to educate herself. Shannon even has the support of Charles Woodson; Green Bay Packers defensive back. Woodson said it was time this barrier was broken. Let’s hope he gives her some props on Thursday evening.

Shannon knew it wasn’t realistic to be an NFL player, but being an official was a different story.  It has been important for Shannon to keep a support network  that believes in her dreams and continues to push her toward these goals. There are enough “naysayers” and people who will scrutinize her work.   I am inclined to believe that Shannon has a growing support group around the country. How impressive that this woman has broken through this ceiling? Her hard work and tenacity are inspiration for anyone who believes  the impossible is possible. Who knows…maybe we’ll see Shannon on Sundays

Because many of us get up on a Sunday morning and hit the t.v. for all the pregame shows….I have the perfect “brunch” style burger…oh, certainly one of my favorites (along with the drink)

My……” Bloody Mary Burger”

Ingredients

– 2 lbs of 80/20 ground beef

-salt/pepper

– 8 eggs

– 3-4 tbsp milk

– 8 slices of American cheese

– 8 kaiser rolls

– 2 cups of ketchup

– 2 tbsp horseradish sauce

– 2 tbsp Worcester sauce

– 2 tsp of old bay seasoning

– 1 tsp celery salt

Directions

1. In large bowl, mix ketchup, horseradish, Worcester, old bay, and celery salt. Refrigerate

2. Form you 2 lbs of beef into 8 patties (make sure beef is at room temperature). Season with salt/pepper. Grill to your liking.  Top with American Cheese slices and melt.  On grill or baking sheet, toast the kaiser rolls. I brush mine with butter and place on my stove top grill.

3. Whisk eggs, milk and salt/ pepper in large bowl. In large skillet, add butter over medium heat. Once butter is melted, pour half of the egg mixture. You are basically making an omelet minus the fold. Once the egg is lightly cooked on the bottom, use a large spatula and flip. Lightly cook and slide out of skillet onto a plate. Repeat process remaining egg mixture. Cut each “omelet” into 4 wedges.

4. Build the sandwich..ketchup on the bottom of  roll, burger with cheese, slice of omlete, some more ketchup…I always have little dish to the side for dipping. Can’t get enough of the stuff….
