Some sad news this week in the world of football…Steve Sabol probably the most honored film maker in the world of sports,  passed away after his bout with brain cancer. Over the years, I have seen the evolution of  NFL footage-movies  produced by the company that Steve’s  father Ed started.  Not so long ago, I  saw a story about their vision and I was blown away by what their work has done for the advancement of the NFL.  Below is a great article from NFL.com speaking to what Steve Sabol brought to the world of all sports fans 🙂  There will be a moment of silence at the beginning of all football games this week to honor Steve’s life and accomplishments.

In order to prepare for the games you watch or attend this week, you will be ready  for your guest with a “Stuffed Submarine Sandwich”.  Make this sandwich on a big loaf of Italian bread and feed a bunch of your friends. I used all of the same ingredients as I would for my Ultimate Italian Sandwich and put them on this big loaf of bread!! Delicious!!

8 kaiser rolls (you replace the rolls with 2 loaves of  Italian bread)

2 whisked eggs

garlic salt

Italian seasoning

2 lbs roasted deli turkey breast sliced thinly

2 lbs Capicola ham

1 lb Genoa salami sliced very thin

2 lbs provolone cheese

4 cups shredded lettuce

1 red onion slice thin

1 cup mayonnaise

1/2 cup red hots (jarred red peppers commonly found in Italian restaurants)

2/3 cup balsamic vinaigrette

Cut all kaiser rolls. Brush egg wash mixture on top part of roll sprinkle with garlic salt and Italian seasoning. Bake at 350 degrees for 6 minutes.  In medium sized bowl toss shredded lettuce with balsamic vinaigrette and refrigerate. In a small bowl, mix mayonnaise with jarred red peppers and refrigerate. Do about 30 minutes in advance of making sandwiches.

Sandwich assembly….

Spread mayo/pepper mixture on bottom part of kaiser roll, layer all three meats on to roll with one slice of provolone cheese. Place all rolls on baking sheet and place under broiler. Do multiple sandwiches at once. When cheese is melted add red onions and lettuce mixture on top. Spread top part of kaiser roll with mayo/pepper mixture. ENJOY!!!! When taking them to the Tailgate, wrap them up in some foil and cut in to pieces at the game.
