Watching the highlights from the British Open, is unbelievably enthralling. Without fail, every highlight reel has featured some angry chap slamming his club down breaking it in half, someone yelling at a ball, another stomping his feet, a couple fellows with weird body language directed toward the ball implying the golf ball should have some ownership to the terrible shot, and the best clip of all… one fine gent whipping his club after missing his shot and it broke a photographers 85,000 dollar camera!!! Ouch…A few sessions with a therapist is way more cost efficient. Perhaps yoga a few times a week. Word on the street, golf is a very frustrating sport to master. Got it! Goodness gracious we all face challenges daily.  Parenting is frustrating, but for the most part, I don’t throw Paige and Brooke around. Clinching my teeth and speaking in a low voice, is much more effective in my home. All jokes aside, I honestly have no idea how these athletes do what they do. Golf is a sport which appears to lend itself to great disappointment, so judging I am not. Coaches Panini with Honey-Chipotle Mayo and Sweet Potato Fries

Ingredients

2 french baguettes

1 pound smoked turkey

1 pound smoked ham

1 pound pepper jack cheese

1 pound hickory smoked bacon

1 cup mayonnaise

2 chipotle peppers with 2 tbsp of adobo sauce

2 tbsp of honey

The fries are a slight cheat… 🙂

1 bag frozen sweet potato fries

1 tbsp cumin

1 tbsp garlic salt

1 tbsp paprika

olive oil

Directions: Panini

1. If you have a panini maker, pre-heat to correct setting. I use my stove top grill pan. Heat to medium and brush with butter or oil.

2. For mayonnaise, combine mayo, honey, and peppers with adobo sauce in food processor. Blend until peppers are fully integrated in the mixture.

3. Prepare sandwich..slice baguette brush with mayonnaise, layer with turkey, ham, bacon, and cheese.  Because I use my grill top, I cut the baguette into 4 pieces and place on grill top. I cover the pieces foil and then top with a cast iron skillet or any other heavy pan. Grill for 1 to 2 minutes per side.

Directions: Fries

1. Pre-heat oven to 425 degrees

2. Mix cumin, garlic salt, and paprika in small dish

3. Place sweet potato fries in ziplock bag, drizzle olive oil over fries, and add mixture. Secure bag and toss around until all fries are coated.

4. Spread on a baking sheet. Bake for 16-20 minutes or until crisp….

Both the sandwich and fries are served with the Chipotle-Honey Mayonnaise
