Thursday night football, thank goodness. Even though I was in and out of the Ravens-Buccaneers game, I made up for my lack of focus last night ,by watching my daily dose of Sport Center this morning. I’ve been brought up to speed on the highs and lows for the evening. Truth be told, I feel I can breathe a sigh of relief. Football is back!!  With all of my attention to the stats, injuries, tweeting, and snippets of controversy this preseason, one of my high points would be, Eli and Peyton Manning’s music Video!!! Eli is of course the QB for the New York Giants and Peyton is the QB for Denver Bronco. There’s even a cameo by dad Archie. The king of New Orleans.  Check this out, it really is hilarious!!  Just fast forward through the commercial…that’s not important.

Now that we are back in the swing of things, I will here and there share my favorite old and new recipes…this is one of my all time favorites..

Buffalo Chicken Dip with Ranch Crackers and Old Bay Pita Chips….

Paige made a point to tell me how pretty my cuticle is…. so let’s get that out in the open before we move forward. I am cooking not getting manicures …..obviously!!

So the dip is all that we love in a Buffalo Wing….


1 roasted chicken or a store-bought rotisserie chicken (shredded)

I like to roast my own chicken and season it with olive oil and butter under the skin and rosemary/basil…salt and pepper in the cavity

– 8 oz cream cheese (softened)

– 1 cup of ranch dressing

– 1 cup hot sauce ( I use crystal)

– 1 cup shredded Mozzarella cheese

– 1 tsp celery salt


1. In sauce pan over medium heat mix; cream cheese, ranch dressing, hot sauce, and mozzarella cheese, and celery salt.  Whisk all ingredients together.. Continue to whisk until smooth.

2. Add shredded chicken and fold together.

3. Place in 350 degree oven and bake for 15-20 minutes

Ranch Crackers….

40 saltine crackers

1/2 butter melted

2 tbsp dry ranch dressing

1. Mix butter and ranch dressing.

2. Place crackers on baking sheet. Brush crackers with butter mixture and bake at 350 degrees for 5-7 minutes.

Old Bay Pita Chips

4 white pitas

olive oil

1. Using kitchen shears, cut pita into wedges. Separate the pieces of pita.

2. Put the pita into a zip lock bag, and drizzle with olive oil and sprinkle with old bay.

3. Place pita on a baking sheet single layer. Bake at 350 degrees for 6-9 minutes. Keep an eye on them as they brown.


1. Chop celery and carrots……they will be pseudo healthy…
