Hosting my cooking show is amazing. Sharing recipes, displaying mouthwatering dishes, and engaging great conversation on camera I love love love. However…there is nothing better than feeding my fans, friends, and Giant customers in person!! A few days ago, I had the opportunity to do another live cooking demonstrations at the Giant Grocery Store approximately 3 minutes from my house; what I deem as my “home” store. With Giant as my sponsor, I set up shop and shared my treats. As the local shoppers and sports fans flooded the gates, I was happy to give them a quick bite and recipe they can use. If the Nielsen Rating people were on hand, high marks for sure. No need for TV Guide to report.

 As “Dr. Craig” and I prep, I am actually warming my hands. Please don’t try this at home. Warming hands over hot oil is not recommended.

DJ Crissy….had all the right hits to keep the afternoon lively. My lovely friend Jen along with her daughter Ava, joined in on the fun. Notice, Jen realized the weather was deceiving. Glad she brought extra layers 🙂

Fan and friend Sandy….bringing the humor 

Throughout the day many samples where given out and enjoyed. However… my mambo sauce, black bean corn salsa, chipotle sour cream, crab dip which was also used for crab melt sandwiches… were some real tongue teasers and pleasers

Crab Melt Sandwiches 


– 1 cup lump crab meat

– 1 8oz block of softened cream cheese

-1/4 cup mayonaisse

-old bay seasoning

-1 tsp Worcester Sauce

– white bread

– white American cheese slices

– eggs (3 to 4)

– milk (1 to 1/12 cups)

– butter

Directions

1. In sauce pan, cream cheese, crab meat, mayonaisse,  worchester sauce, a few

dashes of old bay seasoning over medium low heat. Heat through until texture is smooth and creamy.

2. Remove crust from approximately 20 slices of white bread. In shallow dish, whisk eggs and milk together as you would for french toast add a few dashes of old bay seasoning.

3. Preparing sandwiches, spread bread with crab mixture add one slice of American cheese. Put sandwich together and place into egg mixture. Flip. ( do not allow the bread in the mixture too long as it will become too wet)

4. Place in pre-heated (medium temperature) skillet with butter. Toast each side for 2-3 minutes. Remove from skillet. For additional crispness, place on baking sheet and put into the oven at 400 degrees for 2 minutes per side.

5. Allow sandwiches to rest for a minute and cut into quarters.

 

Golden Chicken Strips and Cornbread Pancakes

with Mambo Sauce

Please try this for brunch!!!

 Mambo Sauce Delicious!!

1 cup ketchup (Heinz- Pittsburgh 🙂

1 cup sugar

4 tbsp water

5 tbsp white vinegar

1 tbsp Spanish Paprika

2 tbsp Sriracha (chili sauce with garlic)

2 tbsp hot sauce (crystal hot sauce)

Add all ingredients in medium sauce pan over medium heat

bring to a simmer,  whisking occasionally. Reduce to low heat

Cornbread Pancakes- Easy!!

-1 box Jiffy Cornbread mix

– 1 cup pre-packaged pancake mix

– butter

Following the directions of both and mix together.

Heat griddle to medium heat, butter, and laddle batter onto

griddle. Allow pancakes to bubble and flip. Cook until lightly golden brown

Golden Chicken Strips

– Vegetable oil, for shallow frying

– 3 full chicken boneless chicken breasts

– 3 large eggs lightly beaten

-1/4 cup hot sauce

– 4 cups all purpose flour (split in half)

– 4 tbsp garlic salt

– 4 tbsp cracked black pepper

– 4 tbsp paprika

– 4 tbsp sea salt

Heat about 2 inches of oil in a large cast-iron or heavy-bottomed skillet over

medium heat. Whisk the hot sauce and eggs in medium bowl.

Equally divide the flour for dredging station in 2 shallow pans. In both

pans with flour add 2 tbsp garlic salt, 2 tbsp sea salt, and 2tbsp black pepper. In last dredging station only, add

paprika. Cut chicken into tenders. Coat tenders in dredging station, flour-egg mixture-flour. Allow

Chicken to rest a few minutes before frying. The coating adheres better.

Fry tenders 4 minutes per side.

Drain on paper towel. Immediately, sprinkle sea salt on the fried tenders.

That is a must! Place pancakes on each plate, add chicken tenders,and

drizzle with mambo sauce ( have tons extra on the side)

 

Black Bean Corn Salsa
camp 183
-1 can of black beans (rinsed)
-1 can of sweet corn (drained)
– 1 red onion chopped
– 1 green pepper chopped
-1 red pepper chopped
– 1 yellow pepper chopped
– 1 jalapeno (seeds removed and chopped finely)
– 1/2  chopped cilantro
-juice of one lime
-salt and pepper
Mix all ingredients together and season with salt and pepper to taste.
Serve with homemade tortillas…..
