When I was little and we got hit with a major snow storm, my brothers and I couldn’t wait to get outside to go sledding, build snow forts, and have snowball battles. I often became the moving target for the snowball.  Typically running for dear life.  Painful as those snowballs could be,  we would stay outside until our fingers and toes were tingling and our knit hats and gloves became ice sculptures. But the beauty of what was probably only 30 minutes of my life, we could trek back in the house when our little bodies simply could no longer endure the elements. Well….the can’t be said for a football team getting smashed with a foot of snow. There is no running to the locker room.  Granted there have been major upgrades to the sideline “warm-up” technology, but sliding across a field of snow and ice appears painful to me.  With my usual channel surfing of the NFL games this past weekend, the games in Pittsburgh, Philly, and Baltimore were simply crazy. Not only the snow blast, but the incredible play.  Whiteout didn’t even describe the conditions for  the game between the Eagles and the Lions.  Lincoln Financial Field was a big old snow globe.  Inclement weather didn’t stop LeSean McCoy from dashing to a record breaking game.  “Shady” McCoy ran for 217 yards racking up 2 touchdowns in Phillys 34-20 win over Detroit.  LeSean’s record breaking game wasn’t the only unbelievable performance for the day. The Baltimore Ravens and Minnesota Vikings had a 2 minute showdown for the ages.  When 5 touchdowns are scored with 2:05 seconds left in a game, it’s truly unbelievable. In post game, Joe Flacco  commented that Tyrod Taylor said,  “It was like watching a video game.” Everyone was so overwhelmed with emotion. Players, coaches, and fans. Ravens withstood the unrelenting snow for a simply stunning win.  People were texting and tweeting up a storm.  Again….this is what we football fans live for!!!

So when you have  big “Snow Day” it calls for some steaming hot soup!!!

Cream of Broccoli and Cauliflower Soup…


– 3 cloves of minced garlic

– olive oil

– 1/3 to 1/2 butter

1/3 to 1/2 flour

– 5 cups whole milk

– 1 cup chicken broth

– 2 cups shredded cheddar cheese

– 16 oz frozen cauliflower and broccoli mixture

– 1 1/2 tbsp garlic salt

– 1 tbsp onion powder

– salt and pepper


1. In dutch oven or large stock pot, saute garlic in olive oil. Add flour and butter to make a rue. Add the butter first and then whisk in the flour. Whisk mixture to a “blonde” appearance.

2. Whisk for about 4-5 minutes. You don’t want your soup to taste of flour.

3. While creating rue,  microwave frozen broccoli and cauliflower in a microwave safe bowl.  Yes…. microwave….Microwave until fork tender. seriously….please take this easy step.

4. Once fork tender, put veggies in a blender or food processor. Add a little milk. Blend to the the consistency you want for your soup. I blend leaving chucks for texture. Set veggies aside.

5. Once rue is blonde, start by adding 4 cups of milk and whisk for a minute. Next add the 2 cups of shredded cheese. Keep whisking until you achieve a smooth texture. Now add veggies, onion powder, garlic salt, salt, and pepper. I bring to a quick boil and then add the final cup of milk and cup of chicken broth.  Cover with lid, reduce heat to low, and simmer for 30-40 minutes.
